Turkey Enchilada Pie
Are you wondering what to do with all of those leftovers from the holidays? If so, I feel you because who wants to throw them out after you spent money and time to cook it. We decided this year that we are not throwing away leftovers, especially the turkey. The holidays are the only time I make dressing and baked mac and cheese. I can eat that everyday! Oh but the turkey, that’s a challenge because nobody wants to waste the turkey. Decided to get creative with the leftover turkey this year. My plan was to make something different with it and freeze the rest of it. I plan to use the leftover frozen turkey for a good turkey gumbo.
This week, I searched on Pinterest to get ideas on what to do with leftover turkey. I found recipes on making turkey enchilada casserole. I got an idea of putting my own spin of this and called it turkey enchilada pie. Simple ingredients and most of them may already be in your pantry. And using that leftover turkey, winning!
For the turkey enchilada pie recipe, take your turkey and pull the meat from the bones and either cut it in shreds or cut it in chunks. Discard as much fat and skin as you can. I had my turkey in chunks and broke it apart in the pot while I was cooking.
Add all of the ingredients together in the pot with the turkey and layer the enchilada in a 7 x 11 inch greased baking dish. I had some turkey enchilada mixture leftover from this recipe and I just put it in a ziploc bag to freeze.
Bake this beauty in the oven for a total of 50 minutes. Once done, top the bake turkey enchilada pie with more cheese and a some cilantro.
The great thing about this recipe is that you can still save the leftovers and freeze it. How cool is that! I love cilantro so I added more of that, shredded cheese, sour cream and even some avocado. Ya’ll, it was so delicious with flavor! Yes, I will definitely be making this again.
