That’s right ya’ll the Memorial Day holiday is here! You know what that means, it un-officially rings in the summer season. If you haven’t done it yet, then you know this is the time to break out those barbecue grills. Hopefully enjoying a day off from work and having some pre-summer fun with the family. Ya’ll know that I love it all. Especially the cooking part on Memorial Day. The holiday also starts grilling season of summer. Stay tuned because I will be posting yummy recipes all summer long. I’m sure you will be doing a lot of grilling and sides, so I wanted to help out with giving a round-up of recipes. These summer recipes are quick and easy that will satisfy any crowd size. The great thing with these recipes is you can double the servings by just increasing up one of the ingredients. Also, these recipes are very summer friendly such as a side dish with the corn and bean salsa, a pasta dish to ending it with a cucumber and tomato salad.
Corn and Black Bean Salsa
You will love this recipe and just as much as I did making it. This corn and black bean salsa is perfect to add with any summer grilling. I like to think that corn and black bean salsa can be an appetizer or a side dish as well. I bet that this Latin inspired dish will be a big hit at your next cookout! Kick A** Kale Pasta
This pasta is great for summer because it’s not a heavy lunch or dinner meal. There is no meat with the pasta. I made this dish for the first time last summer and we loved it. I’m a meat eater but I didn’t miss not having it with this pasta. With the kale and pasta combined brings out a robust of flavors. Cucumber and Tomato Salad with Van’s Vinaigrette Dressing
This cucumber and tomato salad with my homemade vinaigrette dressing is everything. If you’re like me you want to have a cool and light salad during the summer months. That also gives a break from eating any type of lettuce. Plus, it’s so healthy for you! Cucumbers and tomatoes are usually the most popular produce that grows and harvests throughout the summer. Growing up, this was my families favorite salad, what was yours? My dad and uncles always had a garden. Every summer, they always grew tomatoes and cucumbers. We would pick them out of the garden and made this quick salad with vinegar as our dressing. Beware of the onions for this salad! Just saying, that you may not want to add a lot of them especially for bringing to a potluck or cookout. Of course, you can always decrease and make adjustments with the ingredients.
Cucumber and Tomato Salad with Van's Vinaigrette Dressing
Van's Vinaigrette Dressing:
1/2 cup Olive oil
1/2 cup White Wine Vinegar
1 Tbsp Lemon juice
1 1/2 Tsp. Dried oregano
1 1/2 Tsp. Italian Seasoning
1 Tsp. Kosher Salt
1 Tsp. Black Pepper
Add all ingredients in a mason jar. Shake well and keep cool in refrigerator. Pour on any type of salad. Stays fresh in mason jar for 5 days.
Cucumber and Tomato Salad:
3 Cucumbers, peeled and cut in half
3 Tomatoes, cut
1/2 Red onion, cut
1/4 cup Green onions, cut
Clean, peel cucumbers, cut them a little thick and slice them in half. Place cut cucumbers in mixing bowl. Clean, cut tomatoes in half. Then take half tomato and cut them into triangle pieces. Place cut tomatoes in mixing bowl with cucumbers. Cut red onion in half. Slice onions in thin pieces. Loosen onions and place in mixing bowl. Clean and cut green onions. Place in mixing bowl. Sprinkle dash of salt and pepper. Toss cucumbers, tomatoes and onions in bowl. Add vinaigrette dressing. If your mixing bowl comes with a lid, cover, shake it around few times. If you don't have a lid just stir and mix well. Serve in bowls!
