I cannot believe that it’s almost Christmas and not only that, but we are a week away from saying goodbye to 2016. This year has been good, not so good and as always gaining some new life lessons about myself. I spent the day off yesterday to do some last minute Christmas shopping errands. Before I left the house, I was thinking of what to make for the both of us for dinner, because I have not cooked..well neither of us cooked dinner the whole week. We are working to do better on that in 2017!
I had a taste for some home cooked beans! So, what do I do? I brought out my handy slow cooker to do the job for me. I love beans especially red and white navy beans which is a great one pot dish rather you add meat with or not. The fiance loves it when I cook beans plus it’s a great meal for vegetarians. Oh, it’s good comforting food too!
So, I rinsed my navy white beans (1-pound navy (pea) beans), rinsed them and placed them in the crock pot. I added seven cups of water, then some Holy Trinity (chopped onions, green peppers and garlic), Cajun seasoning, handful of garlic powder, onion powder. Add teaspoon of smoked paprika, then cover to cook on High for 6-7 hours. I would recommend cooking on High only if you’re home for most of the day to supervise. Otherwise, if you will not be home all day then setting your crock pot on Low would be beneficial.
I usually peep on the beans after it’s been cooking for over five hours to give it a good stir to finish blending all of the seasonings. I also like to check to see how tender they have become as well as doing a little taste test to make sure the beans incorporated that awesome flavor. Most times, I have to doctor it up with some more seasonings (not too spicy) or adding more garlic and onion powder. I re-cover it, swiitch from High to Low in order to finish cooking for 2 or so more hours. You can always know when the beans are tender and are ready when your stock has become thicker.
During the cooking process you can always add meat to your beans such as ham hocks, neck bones or smoked sausage. Serve over white/brown rice with an option to garnish with chopped green onions and chopped cilantro. Splash a little red or green pepper hot sauce on top if you really want a spicy kick. Yummy!
Now, I have to prepare for Christmas dinner. Waiting until today to head out to the grocery store to get what I need for dinner. Then, wrapping gifts later today for family. Looking forward to spending time with my fiance’s family, cooking and eating delicious food.
