Tofu Italian Sausage and Peppers with Yellow Rice and Kale

This is a quick and easy dish to make for a vegetarian family member or a friend who loves bold flavors. This vegetarian meal does have a spicy kick to it! Not only is it pretty easy to make but it really takes an hour and a half to cook the Tofu Italian sausage, peppers, yellow rice and kale. I think the most time is used towards prepping since I would recommend cooking with fresh cut bell peppers, garlic and onions. I used Tofurkey Italian Sausage (, Zatarain’s Yellow Rice (, and frozen kale to complete this meal. Just so ya’ll know, is that I am not ashamed to use pre-packaged instant rice meals, can or frozen vegetables. On another note, I decided to start cooking with frozen vegetables again. The quality and taste is so much better than can vegetables. I personally think that can vegetables are not as fresh nor as healthy as frozen veggies. Can vegetables contains way too much liquid and additives.

I made this meal this week for the fiance (the vegetarian) who wanted a bold and spicy meal. Of course, I had to ask him some questions to figure out exactly what he was craving. Once I figured it out my response was, ”I got you babe and you’re going to love it.”

Here is where all of the Tofu Italian Sausage, green bell peppers, red bell peppers, jalapeño, red onion, garlic and seasonings are all together simmered in a cast iron skillet.


Sprinkle with cayenne powder, sprinkle with Creole seasoning, garlic powder, onion powder, oregano and Italian seasoning and add a 10oz. can of Rotel Diced Tomatoes & Green Chilies (

Bring it all together and plate your Tofu Italian Sausage with peppers, yellow rice and kale.


Tofu Italian Sausage and Peppers with Yellow Rice and Kale

1 pk. Tofurky Italian Original Sausage
1 10oz. Can Rotel Diced Tomatoes & Green Chilies
1 Green Bell Pepper
1 Red Bell Pepper
1 Red Onion (Use half of the onion)
2 Garlic cloves
1 Jalapeno
1 Box Zatarain’s Yellow Rice (2 boxes if doubling recipe)
1 Bag Frozen Kale or a 1/2 bag, to your preference
2 Tsp. Garlic Powder, to taste
2 Tsp Onion Powder, to taste
1 Tsp. Cayenne Powder, to taste
1 1/2 Tsp. Creole Seasoning, to taste
1 Tsp. Italian Seasoning, to taste
1 Tsp. Oregano, to taste
Green onions, garnish (optional)

Chop Tofurky Italian Original Sausage, set aside. Cut length wise green bell pepper, red bell pepper and half of red onion. Chop and mince two cloves of garlic. Using cast iron skillet, coat skillet with extra virgin olive oil or grapeseed oil. Heat skillet and add Tofurky Italian Original Sausage, peppers and red onion. Cook on low heat. Add can of Rotel Diced Tomatoes & Green Chilies. Continue to cook on low. While this is cooking and doing it’s thing you can proceed to cook the yellow rice and kale. Follow directions on box for cooking Zatarain’s Yellow Rice. In a small pot, pour a little extra virgin olive oil. Add your frozen kale (as much as you want), add 1/2 cup of water. Season with a dash of garlic powder. Dash of onion powder. Dash of salt, pepper and dried onions. Stir well, Cover and cook on medium-low heat. Stir Zatarain’s Yellow Rice, add 1/2 cup of water to fluff rice. Turn off heat once rice is tender and fluffed. Kale is cooked once water has evaporated and tender. Garnish plate with chopped green onions.
